Quiche

Quiche is a great dish that starts with a few items in your frig and results in a satisfying entrée. You can use your favorite pie crust or even cheat with a frozen one from your grocery store. Add your favorite ingredients using as many or few as you wish.

Here is a simple recipe to get you started. Sometimes, I use ham instead of bacon or add sautéed mushrooms or onion. It is also a good way to use up left over roasted chicken or cooked vegetables.

One pastry crust
4 oz. sliced bacon, diced
3 large eggs, lightly beaten
1 1/2 c. half milk and half cream
1/2 tsp. salt
1/4 tsp. freshly ground black pepper
1 c. grated Gruyère or any cheese you like

Preheat your oven to 375 degrees.

Fry the bacon until crispy and drain on paper towels.

Beat together the eggs, milk mixture, salt and pepper.

Place pie crust in a 9 or 10 inch pie pan. Layer the cheese on the bottom of crust.

Add the bacon and pour the egg mixture over it.

Bake until the filling is browned and set, 25 to 35 minutes.
